Chiloé has a great deal of very special plates.
The people in this island have been producing all ingredients since the beginning of their settlement here. For that reason, they have proudly preserved not only the traditional recipes, but also the way of cooking those traditional plates and the ingredients.
It has to be said that in the Island, eating is really important. In one way or another all elements of their culture have been directly related with food. They really love to eat and a lot (for example, the traditional Chilote lunch includes 4 main dishes).

The most famous Chilote plates, under the absolute must be tried category, are the Curanto and Polmai. All based in the 3 main ingredients of the diet of Chiloé, meat, seafood and potatoes. The Curanto is prepared in a special pan placed in a whole in the ground. All ingredients are boiled for hours, each being added on a very delicate and complicated time line. It includes clams, mussels (cholgas and choritos), potatoes, peas, habas, smoked beef, cheese, onions, water, and white wine. The Polmai is bassically the same as Curanto, but prepared in a regular pan (they also call the Polmai “Curanto en Olla”).

We should also mention the Chapalele, Chochoca, and Milcao varieties of potato based bread. There is also a very special type of sweet apple empanada produced in Chiloé.
