That Special Taste..., The Temuco Market |
Many of you that are more familiar with Chile, as you read this article, will wonder why the Temuco market is so special, when many of the same things can be found across all of Chile. That is exactly the point. We challenge you to try the traditional Chilean products and products of the Temuco market, then compare it with any place in Chile for both the quality and selection in one location.
Even in the IX region, you will find markets that sell a better local version of the things covered in this article, but it will be very hard to match the scope of Temuco market's selection in one location. At the very least, this challenge should be fun.
In a kind of “all roads lead to Rome” sense, the Temuco market attracts the best foods that the surrounding communities can produce. It is one of the largest in the region, with more than 6 blocks of covered stalls and several additional blocks of shops and street vendors. There is also a major two block expansion nearing completion.
The Temuco market is well organized, clean, and very safe without loosing the adventure of a real Latin American market by being scrubbed into some sort of dull supermarket. Did we mention it was safe? We counted more than 10 police officers in a 2 block area.
Being a major regional transit point, for one reason or another, most people coming or going from the area will find themselves with time to kill in Temuco. The market is a few blocks from most of the regional bus stations. The rural bus station is across the street from the market. For those passing through, with a couple hours to kill, this could not be a better or a cheaper way spend the afternoon.
So, regardless if you are living in Temuco or just passing through for the day, we would like to give you our 5 favorite southern chile products to find at the Temuco market.
1. Cheese
First on our list is the Cheese. Depending on the time and day, you should be able to find about a dozen Cheese sellers. For those of us that have not fallen in love with “queso fresco” (as appealing as fresh wine), this is your big chance to eat some real cheese at a good price. Our recommendation is to ask for the older cheese, and then work your way back to the younger cheeses.

Chileans tend to be a bit turned off by the strong flavors of the older cheese, but it will more likely have typical European cheese flavor.
We do need to say, depending on the quality, the older ones do have their limits and may not be the best. However, they are a good place to start tasting, and you might get a deal because of their lack of popularity. In General, expect to pay around $600 pesos ($1 US) for half a Kilo of great Cheese.

Our favorite stall is run by our friend Yoly Henríquez. She has a great selection of older cheeses and a beautifully maintained stand. She also sells honey and spices.

2. Spices
On the subject of Spices, the Temuco market is loaded with the smells of Spices. This has a nice of way of controlling the standard overwhelming mix of odors found in most markets around Latin America. The Temuco Market has all the standard spices you would find in any kitchen such as oregano, cumin, and pepper. However, Southern Chile, and the IX region, have their own special spice rack.

One of the most eye catching spices is the dark red Merken (or Merquen). The key element is the ají cacho de cabra combined with coriander and garlic, then smoked or toasted, dried, and ground to a powder. Let us just call it an overwhelming mix. Very hot.

3. Ají Cacho de Cabra
The Ají Cacho de Cabra deserves a serious mention as a very serious chile. They are sufficiently hot to justify the name Chile for this country. The most common way of preparing this hot pepper in Southern Chile is smoked and curred.

4. Humitas
Humitas are corn, ground, cooked, and mixed with fried onion and spices. They are then rapped in the corn husk and boiled. Humitas are commonly eaten with pebre and tomatoes, or with sprinkles of sugar on top. This is something only for the sumer.

5. Mote
Our final thing to see, not so much taste, at the Temuco market is the Mote (special wheat), of the famous “Mote con Huesillos" that has been produced in the traditional way. Mote can be bought in a canned form, but for the better “Mote con Huesillos” drink it is processed by hand using ashes to separate the wheat kernel. We are still not clear as to exactly what “Mote con Huesillos” is, but this might help clarify at least one of the elements. The other ingredient is dried peaches or apricots.

For the best “Mote con Huesillos” in Temuco, prepared with the traditional ingredients we just described, we must refer you to “El Rey del Mote con Huesillos” (The King) in the Temuco main plaza. A glass runs about $350 for the best of this very special taste.

We should also give a quick mention to the typical fruits and vegetables, and when to look for them around Temuco. During the summer water melons, melons, cherries, peaches, grapes, apricots, and corn are best. In the winter apples, oranges, some berries, and most of the vegetables are available.
